The dashi this time is a well-balanced blend of bonito from Makurazaki, Satsuma, and dried mackerel and dried round oysters from Ushibuka, Kumamoto Prefecture, with mackerel from southern Hokkaido added to create a white dashi made with only natural ingredients, with health in mind, and finished to bring out the flavor of each oden ingredient.
